Sibarita Palillo

Sibarita palillo chicken rice

Chicken Rice

4 tbsp oil
6 chicken pieces
1 chopped onion
2 chopped garlic cloves
1 tbsp Aji amarillo paste
1 chopped carrot
1/2 cup chopped corn
3 cups rice
1 tsp. Sibarita palillo
1 tsp.cumin
5 cups chicken broth
1/2 cup peas
2 bay leaves
salt and pepper

Heat the oil in a pot and brown the pieces of chicken, previously seasoned. Add the onion, the garlic and let it brown for two minutes. Add the Aji amarillo paste, the carrot, the corn and stir. Add the rice and cook, stirring constantly, for two minutes. Add the Sibarita Palillo, cumin and season with salt.
Add broth, stir and add the pea and bay leaves. Cook over high heat until the liquid evaporates. Lower the heat to low, cover and continue cooking until the rice is ready.
